For the cookie dough

- 2 medium whole eggs
- 75 g sunflower oil
- 350 g all-purpose flour (00)
- 100 g sugar
- Grated zest of 1 lemon
- 4 g baking powder
For the filling
- 300 g Babbi Cremadelizia Caramelised Figs
For finishing
- Icing sugar q.s.

Preparation
- Prepare the shortcrust dough: whisk the eggs with the sugar in a bowl.
- Add oil, lemon zest, flour and baking powder.
- Mix until the dough begins to firm up; then transfer to a lightly floured surface.
- Roll the dough into a rectangle about 0.5 cm thick.
- Spread the Babbi Cremadelizia Caramelised Figs along the centre, leaving the edges free.
- Fold one long side of the dough over the filling, then fold the other side to “wrap” the filling and form a log.
- Cut the cookies to the desired width using a knife dipped in water.
- Place on a baking tray lined with parchment paper.
- Bake at 180°C for 20–25 minutes (static mode).
- Let cool and dust with icing sugar.
